How to Record Wastage in IndiCater

Introduction

This guide explains the process of recording wastage in IndiCater

Wastage can be entered as Item wastage or as Dish Wastage.

This guide will go through both options.

Where to find this

Wastage is entered in the outlet.

Navigate to StORM > Wastage

Outlet users will need to have the Wastage permission to record Wastage.

Step-by-step guide

1.Click on Wastage and you will land on the current week. If you want to enter Wastage into a different week, change the week here. Please note you can only enter Wastage into an Open week.

2. If you have already recorded wastage in the week selected, you will see the records below under the relevant headings.

3. To add a new record click Add.

You will have the option to select from 4 different wastage types.

  • Item wastage - this is the recording of wastage of catalogue items and uses Stock Locations (which are also used for ordering and detailed stocktaking)

  • Dish Wastage - this allows you to record wastage of a dish that has been created in Recipe Manager

  • Staff Meals and Promotions - these also allow you to record wastage of a dish and should be used if you want to track the giving away of dishes where a sale is not being made, eg lunch for the team members.

 

Item wastage

Select the relevant department and stock location and ensure the date is correct. Click Continue to proceed.

The view is similar to the detailed stocktaking and will show you the latest information.

Enter the quantities and select a reason for each entry - this is compulsory.

You don't have to enter a quantity for all lines, them a 0 where there is no wastage being recorded.

When finished click Update Wastage at the bottom of the page.

Repeat with a different stock location as required. 


Dish Wastage

Select the relevant department and check the date is correct.

You will see a list of dishes you can enter wastage for. These will show a number of portions unless they are Combos (dishes created an ingredients to be added to other dishes, eg a sauce) in which case they may show a weight or quantity of a specified unit of measure.

Enter the quantity and add a reason.

In the below example of the strawberry butter cream, the recipe makes 635g. If you enter 1, you are recording 1 x 635g.

When finished click Update Wastage at the bottom of the page.

Development is planned to enable users to enter wastage as a weight for all dishes where the weight can be calculated.

 

How is wastage reported?

Using the reporting module, wastage reports can be run to show wastage by category and reason.



Wastage is also used in the Item Variance and Theoretical reports to help calculate the theoretical stock.

I record my Dish Wastage on the till, can that be added to IndiCater?

Yes, if we can integrate with your EPoS we can import your Dish Wastage. 

You can still enter Item Wastage in IndiCater

Can the reasons be changed?

Yes, these can be amended to suit each client.
